Every effort is made to source our ingredients from local producers. Our eggs come from a small local hill farm. They are organic and the hens roam freely across the hills. The eggs do not have the lion mark however, and so cannot be guaranteed free of salmonella. If you have concerns about this, please let us know and we will ensure that the yolks are thoroughly cooked to remove this minute risk.
